White Chocolate Mud Cake Recipe

1kg butter
4cups milk
8cups castor (superfine)sugar
600gms white chocolate
8 cups plain flour sifted
1 1/2 tbs baking powder
1 tbs vanilla extract
8 eggs
Method
- Preheat oven 160C(325F) grase and line 35cm square cake tin.
- Place butter, milk, sugar and choc in saucepan over low heat stirring until smooth. Cool.
- Place flour, baking powder, vanilla and eggs in large bowl.
- Using electric hand beater mix in choc mix until smooth.
- Pour mixture into lined tin.
- Bake 2 hours and 20 mins or until cake is cooked when teasted with skewer. Can take a little longer to cook.
- Leave in tin to cool.
- Decorate with white choc ganache, icing or simply dust with icing sugar.
