Dark Chocolate Cake Recipe

3 ounces 70% cocoa solids dark chocolate
1 cups hot water
2 cups sugar
2 1/2 cups all-purpose flour
3/4 cups sweetened cocoa powder (40% or better cocoa solids)
2 teaspoons baking soda
3/4 teaspoon baking powder
1 1/4 teaspoons salt
3 large eggs
3/4 cup vegetable oil
3/4 cups milk
3/4 teaspoon vanilla
Method
- Preheat oven to 150°C. and grease large cake pan.
- Break the chocolate into small pieces into a bowl and melt in a double boiler.
- Into a large bowl sift together sugar, flour, cocoa powder, baking soda, baking powder, and salt.
- Gradually stir in the hot water to the melted chocolate.
- In another large bowl beat eggs until thickened slightly and lemon coloured.
- Add the oil, milk and vanilla to the eggs, beating until combined well.
- Stir the egg mixture into the chocolate/water, stirring til well mixed.
- Add chocolate/egg mixture to flour and stir until combined well.
- Pour into pan and bake in middle of oven until a tester inserted in centre comes out clean, 1 hour to 1 hour and 30 minutes.
