Dark Chocolate Cake Recipe

Ingredients

3 ounces 70% cocoa solids dark chocolate
1 cups hot water
2 cups sugar
2 1/2 cups all-purpose flour
3/4 cups sweetened cocoa powder (40% or better cocoa solids)
2 teaspoons baking soda
3/4 teaspoon baking powder
1 1/4 teaspoons salt
3 large eggs
3/4 cup vegetable oil
3/4 cups milk
3/4 teaspoon vanilla

Method

  1. Preheat oven to 150°C. and grease large cake pan.
  2. Break the chocolate into small pieces into a bowl and melt in a double boiler.
  3. Into a large bowl sift together sugar, flour, cocoa powder, baking soda, baking powder, and salt.
  4. Gradually stir in the hot water to the melted chocolate.
  5. In another large bowl beat eggs until thickened slightly and lemon coloured.
  6. Add the oil, milk and vanilla to the eggs, beating until combined well.
  7. Stir the egg mixture into the chocolate/water, stirring til well mixed.
  8. Add chocolate/egg mixture to flour and stir until combined well.
  9. Pour into pan and bake in middle of oven until a tester inserted in centre comes out clean, 1 hour to 1 hour and 30 minutes.
