Chocolate Zucchini Cake Recipe

Ingredients

115g Butter
120ml Vegetable Oil
350g White Sugar
2 Eggs
120ml Sour Milk ( see note )
5ml Vanilla Extract
250g All Purpose Flour, sifted
5g Baking Soda
1g Cinnamon, Ground
1g Ground Cloves
3g Salt
20g Unsweetened Cocoa Powder
280g Zucchini, Grated
20g Walnuts, Ground
40g Semisweet Chocolate Chips

Method

  1. Cream together butter or margarine, vegetable oil and sugar.
  2. Add eggs, sour milk, and vanilla. Blend well.
  3. In a separate bowl, sift dry ingredients together.
  4. Blend dry ingredients into the butter mixture.
  5. Add grated zucchini, and mix well.
  6. Spread in a greased floured 9 x 13 inch pan.
  7. Sprinkle walnuts and chocolate chips on top.
  8. Bake in a preheated 325 degrees F (165 degrees C) oven for 45 minutes.
