Ingredients

12 ounces semisweet chocolate
3/4 pound sweet butter
8 egg yolks
1 cup brown sugar
1/3 cup white sugar
1/3 cup ground almonds
1 tablespoon all purpose flour
1/4 cup cornmeal
8 egg whites
1 tablespoon cream of tartar

Method

  1. In large saucepan over very low heat melt chocolate.
  2. Add butter then stir until melted and remove from heat.
  3. In large bowl combine egg yolks, brown sugar and white sugar then stir until well mixed.
  4. Add chocolate and stir well until combined.
  5. In small bowl combine almonds, flour and cornmeal then stir until well mixed.
  6. Pour into chocolate and stir until combined.
  7. In large bowl with electric mixer beat egg whites with cream of tartar until they form stiff peaks.
  8. Fold egg whites into chocolate in three batches.
  9. Bake in a buttered floured springform pan for 5 minutes at 400.
  10. Reduce heat to 350 and bake another 25 minutes.
  11. Let cool completely before removing from pan.
