Chocolate Marble Loaf Cake Recipe

Ingredients

1/3 cup shortening
1 cup sugar
1 teaspoon vanilla extract
2 cups sifted cake flour
2½ teaspoons baking powder
1/4 teaspoon salt
2/3 cup milk
3 stiff-beaten egg whites
1 (1-oz.) square unsweetened chocolate, melted
2 Tablespoons hot water
1/3 teaspoon red food coloring

Method

  1. Stir the shortening to soften. Gradually add sugar; cream together till light and fluffy.
  2. Add vanilla axtract. Sift together flour, baking powder and salt; add to creamed mixture alternately with milk; beat after each addition.
  3. Fold in egg whites.
  4. Combine remaining ingredients; add to half the batter.
  5. Alternate light and dark batters by spoonfuls in paper-lined 9½ x 5 x 3-inch loaf pan. Zig-zag spatula through batter.
  6. Bake at 350° F for 40 to 45 minutes.
