Chocolate-Glazed Carrot Cake Recipe

Ingredients

Cake:
1 1/2 cups blanched whole almonds
3/4 cup all purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
2/3 cup golden raisins
3 tablespoons orange juice
4 squarkes semi sweet chocolate
1 cup sugar
1/3 cup butter (2/3 stick)
4 eggs
1 1/2 cups shredded carrots
1 1/2 teaspoons grated orange zest
1/2 teaspoon vanilla

Sweet Chocolate glaze:
9 squares German sweet chocolate
2 tablespoons water
2 teaspoons butter
3/4 cup sifted confectioners sugar

Method

  1. Toast almonds and set aside.
  2. Grease a 13 x 9 inch loaft pan; line bottom with waxed paper and grease again.
  3. Mix flour with baking powder and salt.
  4. Combine raisins and orange juice in small bowl; set aside.
  5. Cut chocolate in chunks; chop coarsely in food processor or blender with almonds and 1/2
  6. cup of the sugar.
  7. Beat butter in large mixer bowl until soft; beat in remaining sugar.
  8. Add eggs, one at a time, blending well.
  9. Stir in flour, nut and raisin mixtures, the carrots, zest and vanilla.
  10. Pour into pan.
  11. Bake at 350 degrees for 1 hour and 15 minutes or until top springs back when lightly pressed.
  12. Cool in pan 10 minutes.
  13. Remove and cool on rack.
  14. Top with Sweet Chocolate glaze.

Sweet Chocolate glaze:

  1. Melt the German Sweet chocolate with 2 tablespoons water and 2 teaspoons butter in saucepan, stirring constantly.
  2. Gradually blend into confectioners sugar and beat until smooth.
  3. Top cake.
