Chocolate Covered Cherry Cake Recipe

Cake:
1 package devil’s food cake mix
1 (21 ounce) can cherry pie filling
2 large eggs
1 teaspoon almond extract
Frosting:
1 stick of butter (or margarine if you must)
4 Tbs cocoa
6 Tbs of sweetened condensed milk
1 lb powered sugar
1 tsp vanilla
Method
- Place rack in center of the oven and preheat to 350degrees.
- Lightly mist a 13×9 inch baking pan with vegetable oil spray.
- Set pan aside.
- Place all ingredients into large mixing bowl and beat with electric mixer on low for 1 minute.
- Stop the machine and scrape down the sides of the bowl with a rubber spatula.
- Increase speed to medium and beat for 2 minutes more.
- The batter should look thick and well blended.
- Pour the batter into the prepared pan, smoothing the top with a spatula.
- Place the pan in the oven.
- Bake the cake for 30-35 minutes.
- Remove cake from oven, pour frosting over top and smooth frosting if necessary.
Frsoting:
- Begin making frosting about 5 minutes before cake is done.
- Melt together and bring to a boil: butter, cocoa and condensed milk.
- Remove from heat and add the powdered sugar and vanilla.
- Beat well and spread on cake while both are hot. If frosting is too thick, microwave 1 or 2 tablespoons of milk and add to frosting to achieve desired consistency.
