Ingredients
Chocolate Cookie Crust
140g Chocolate Cookie (crushed)
95g unsalted butter melted
dash of nutmeg powder (optional)
Filling:
A
11/2 teaspoon gelatin powder
250ml full cream milk
2 egg yolks
B
150g cooking chocolate
350g cream cheese soften
125g caster sugar
Method
Chocolate Cookie Crust:
Combine all ingredient and press mixture evenly onto the bottom of a greased 9″(22cm) square loose base pan. Chill in fridge until firm.
Filling:
- Combine all ingredients A and double boil until gelatin powder has dissolved.
- Double boil cooking chocolate until melted, and in the two egg yolks and mixture mix well
- In a large bowl, beat the cream cheese, sugar with an electric mixer at medium speed till smooth, slowly add in the mixture and stir well.
- Pour onto the prepared crust.
- Chill in the fridge for 3hrs or until set.
Note: If you prefer a richer chocolate taste, add 50g chocolate chips or add in dark or white chocolate to bring out different flavors of chocolate.
