Ingredients

170 gr of a very good bitter chocolate (at least 56% chocolate butter content)
170 gr butter
6 eggs
275 gr sugar
90 gr flour

Method

  1. If you have a Thermo-mixer, use the setting of 37° to melt chocolate, if not, use a double boiler and carefully melt chocolate.
  2. Whisk in butter, sugar, eggs, flour, make a smooth dough.
  3. Take soufflé forms. Brush with butter, coat with sugar.
  4. Bake for 6 (six) minutes in a 230 °C oven.
  5. Now, if you have these steel rings, you can place them on a cookie sheet covered with baking paper. Then you can remove the ring, place the little cake on the serving plate – it is more impressive because, when you stick in the spoon or fork, the melted chocolate will run out.
  6. Serve it with a good vanilla ice-cream or some fruit.
