Chocolate Cake For Royalty Recipe

Cake:
2 cups white sugar
1 3/4 cups flour
3/4 cup unsweetened cocoa powder
1 1/2 teaspoons baking soda
1 1/2 teaspoons baking powder
1 teaspoon salt
2 eggs
1 cup milk
1/2 cup vegetable oil
2 teaspoons vanilla extract
1 cup hot coffee
Chocolate Icing:
2-1/2 sticks unsalted butter
1 1/2 cups unsweetened cocoa powder
5 1/3 cups confectioners’ sugar
2/3 cup milk
1 teaspoon vanilla extract
Method:
Cake:
- In large mixer bowl, whisk together sugar, flour, cocoa, baking soda, baking powder,salt.
- Add eggs, milk, oil, vanilla, beat 3 minutes with mixer
- By hand stir hot coffee into mixture
- Pour evenly into two 9 inch greased and floured pans
- Bake 30 - 35 minutes at 350 degrees or until a toothpick inserted comes out clean
- Cool 10 minutes before removing from pans
Chocolate Icing:
- In medium bowl, with mixer, cream butter until light and fluffy
- Add, by mixing on low, cocoa, and powdered sugar alternately with milk and vanilla
- Beat until creamy and spreadable
- Split cooled layers of cake horizontally (I use long bread knife)
- Cover top of each layer with frosting
- Stack them on cake dish or serving plate
- Frost entire outside of cake
- This makes a beautiful chocolate cake, and it truly is delicious.
