Chocolate Cake For Royalty Recipe

Ingredients

Cake:
2 cups white sugar
1 3/4 cups flour
3/4 cup unsweetened cocoa powder
1 1/2 teaspoons baking soda
1 1/2 teaspoons baking powder
1 teaspoon salt
2 eggs
1 cup milk
1/2 cup vegetable oil
2 teaspoons vanilla extract
1 cup hot coffee

Chocolate Icing:
2-1/2 sticks unsalted butter
1 1/2 cups unsweetened cocoa powder
5 1/3 cups confectioners’ sugar
2/3 cup milk
1 teaspoon vanilla extract

Method:

Cake:

  1. In large mixer bowl, whisk together sugar, flour, cocoa, baking soda, baking powder,salt.
  2. Add eggs, milk, oil, vanilla, beat 3 minutes with mixer
  3. By hand stir hot coffee into mixture
  4. Pour evenly into two 9 inch greased and floured pans
  5. Bake 30 - 35 minutes at 350 degrees or until a toothpick inserted comes out clean
  6. Cool 10 minutes before removing from pans

Chocolate Icing:

  1. In medium bowl, with mixer, cream butter until light and fluffy
  2. Add, by mixing on low, cocoa, and powdered sugar alternately with milk and vanilla
  3. Beat until creamy and spreadable
  4. Split cooled layers of cake horizontally (I use long bread knife)
  5. Cover top of each layer with frosting
  6. Stack them on cake dish or serving plate
  7. Frost entire outside of cake
  8. This makes a beautiful chocolate cake, and it truly is delicious.
